Held items influence several different things when an egg is created. For the most part, these effects are based off of the parent that is holding the item, so make sure you give it to the right one!

Ideally you'll place the Destiny Knot on a Ditto with 5-6 Perfect IV's, and the Everstone on whatever Pokemon you're breeding with the target Nature. A Pokemon holding a Mirror Herb will learn Egg Moves from compatible Pokemon during a picnic, so long as it has an empty move slot.

The Pokemon holding these items will pass down the corresponding IV to the next generation. Additionally, Pokemon holding these items will gain twice as many corresponding EV's in battle.

Vitamins will raise an EV's value 10 points. Berries will lower them by 100 points if the EV's value is greater than 100, or 10 points otherwise. These special EV reducing berries can be either purchased at the Porto Marinado Auction, as a prize for winning the Emotional Spectrum Practice Re-Run game in Alfornada, or as a random drop in Tera Raids. They are also available for purchase with points in Ogre-Oustin' (citation needed)

Feathers can be found strewn about any large body of water in Paldea, Kitakami, or Blueberry Academy. They work as a tool to fine tune EV's for Pokemon with very specific targets.

Mochi can be won as a prize for playing the Ogre-Oustin' mini-game in Kitakami. The number recieved is dependant on the difficulty and can be up to 10 of any type. They work identical to Vitamins, but instead of costing $2,500 they cost 2,500 hours (Ogre Oustin' is laggy!)
Fresh-Start Mochi

Fresh-Start Mochi are a guaranteed drop every round of Ogre-Oustin' but the higher the difficulty the more you get. Very useful if you want to build your Pokemon's stats completely from the ground up.

Pokemon's Tera Typing can be changed by visiting the Treasure Eatery in Medali, and talking to the gentleman near the back of the restaurant. It will cost 50 of the type of shard you want to convert to so make sure to pick the correct one!

Ability Capsules will swap between a Pokemon's 2 main abilities, while Ability Patches will unlock a Pokemon's hidden ability. Pokemon found in 3-Star Raids or higher also have a higher chance of having their hidden abilities as well.
With the release of Pokemon Scarlet & Violet breeding has been made infinitely easier for trainers who don't want to go through the process of breeding for IV's & Natures. Below are a few shortcuts for training up Pokemon to be competition-ready!
Nature Mints

Nature Mints will passively change the nature of your Pokemon so it's Stats will reflect accordingly. Minted Natures do not pass down via breeding.
Hyper Training

Hyper Training can be done for any Pokemon level 50 or higher by speaking to the man standing with an Abomasnow near the Pokemon Center in Montenevera. Bottle Caps will max out 1 IV of your choice, and Golden Bottle Caps will max out all IV's. Hyper-Trained IV's do not pass down via breeding.
